Avocado mousse and cumin tiles

ingredients: – 2 avocados (about 300 g of flesh)

– 1/2 lemon

– 2 stirred yogurts or 25 cl of liquid cream

– A few sprigs of fresh coriander

– Espelette pepper

– 1 tsp. olive oil

– 125 g of flour

– 1.5 tsp. sugar

– 1.5 tsp. choice of spices

– 15 cl of white vinegar

– 1.5 tsp. melted butter

Prepare the tiles 1. Preheat the oven to 240 ° C (th. 8).

2. Mix the flour, sugar and spices.

3. Add the vinegar, melted butter and 3 tbsp. water.

4. Mix vigorously but without working too much.

5. Form discs of dough using a kitchen brush on a baking sheet lined with baking paper.

6. Cook 10 min until the tiles are golden.

7. Remove from the oven and let cool before delicately peeling off.

Prepare the foam: 8. Cut the avocados in half, remove the stone and collect the flesh.

9. Mix the flesh with the lemon juice then add the yogurts and coriander.

10. Mix again then switch to Chinese. Add salt and pepper.

11. Transfer the preparation to a siphon, screw on a gas cartridge, shake and then refrigerate for at least 2 hours.

12. Serve the mousse in verrines, sprinkle with a dash of olive oil, sprinkle with Espelette pepper and taste with the tiles
